Participatory approach to design school canteen activities: an action-research

Abstract

The canteen practice in three schools is being studied in a collaborative action
research. Key variables have been identified: the organization of time,
the space and the rules of socialization. By a preliminary phase of formulating
and positioning of the problem, the subjects involved (primary School
children, teachers, parents, professionals) highlight the strategies for improvement
and corrective actions based on expert knowledge and experiential
learning. This issue represents a challenge for the school and the educational
innovation, because the constitutive complexity of nutrition education
draws multidisciplinary aspects from a cultural, political, economic,
and social point of view.
